I add an alternative to the previous method, enabling to make dynamic sections and clip desired objects. This alternative uses the Clipping Tool, available in Catia Apps (thanks to @OC for raising this tool). 
Access to Product Structure Design App (include in all Machining roles) should be sufficient to use this tool. 
 
This method is particularly interesting because it enables to clip the part (and edit the sectioning) during the material removal simulation:

I suggest a method to create section views usable in your CAM environment. It can be useful when you work on parts with cavities and other undercut areas. The enclosed document describes the method to create and edit a Product Markup and apply the sectioning that you can use within Tool Path Display.

*The method requires at least one CATIA  role to be able to insert a Markup.
