When running flow simulation, which values should I look at? Would maximum value be realistic or should I look converged values?

Assuming you got initial condition of wind 5m/s and then you simulate at 20m/s. Should then I look at maximum value? Is the maximum value the result of instant speed change of wind?

Does that work the same way if I use results from previous calculation? If in previous calculation the converged values were at 20m/s then new calculation is 30m/s would then maximum force be result of instant wind speed change from 20 to 30m/s?
