Ok- my turn to ask the age old question - any suggestions on a stable version/sp?

We have run 2008 sp5 for about 3 years now.  Our company has gone through some

ups and downs with admin time and availability (I was off for 15 months).... so understand I am playing catch up

on the whole admin responsibility end of things.
