How to create a new assembly in an existing assembly

OK guys and gals...I have an existing assembly that I am needing to add hose assemblies to. See below for the existing assembly...

The new hose assembly (not created yet) will need to have the two end pieces inserted in place and then I will have to run a new hose from fitting to fitting.

> Insert >Component>New Assembly is the route I am going. Then, I modify the new assembly by inserting the hose ends - this is where I have the problem. I can not select any of the existing geometries to proper place the hose ends. For instance: I can grab the tube of the fitting as a mate, but it won't allow me to select the inside diameter of the existing fitting for a concentric mate.

Whats the proper way of building a new assembly in an existing assembly - and being able to use all mate functions?
