Glitch/Error on Large Assembly for Display State

I am a CSWA and have used Solidworks since 2014.  I recently downloaded Solidworks 2024 as I thought my old version of the software was causing a glitch/error on large assemblies; however I now see it is the same in the latest 2024 download.

I am working on a tiny house project for myself, one that I will soon start building.  Up until now the assembly has gone great, no problems, but as soon as I add in my dining table or change the table's configuration (has about 7 configuration states), the entire model gets painted in the appearance of granite (Appearance>Stone>Architectural>Granite), not just the table I imported.  If you go to appearances however, nothing has changed (the software has not applied any new appearance even though it most certainly is displaying one) and there is no way to undo the change nor get the model to display with the proper appearances again.  

When this happens I simply close the assembly without saving and re-open it, where all the colors/textures are back to normal again.  I edited my table assembly and removed the granite appearances from all surfaces/objects.  I also went to my kitchen assembly and removed the granite appearances from the counter.  There is not a single item inside the assembly with the texture/appearance of granite.  Despite this, once again my entire assembly gets painted in granite.  Now I'm realizing that even if I delete the kitchen and table, then try to re-import them, the same thing happens.  It's as if no matter what I do this model is simply self-destructing every time I import it.  Needless to say this is not how Solidworks is supposed to work.  Any ideas for how to fix this?  Sure I can always re-create the assembly with the same exact parts as before, but I'd rather just have this glitch resolved as Solidworks is supposed to make me more efficient rather than costing me valuable time.  Edu
